The fresh wild garlic, which thrives in the natural deciduous forests of our region, develops its full flavor for only a few weeks in spring – from mid-March to May. For over 30 years, we at Kredenbacher Hof have been intensively involved with this wild spring herb and are among the first farms to have developed a sustainable concept for the professional harvesting and gentle processing of wild garlic.

Today, we supply hand-picked organic wild garlic from certified wild harvesting to shops, farmers' markets, restaurants, and food manufacturers throughout the German-speaking world. Our trained harvesting teams pick the tender leaves during the season under suitable weather conditions, carefully sort them on site, and promptly place them under gentle cooling to preserve their quality and freshness to the best possible extent.

Since fresh wild garlic only keeps for a few days, we carefully process part of the harvest into dried wild garlic flakes . These are not as intense as fresh garlic, but retain their typical wild garlic flavor and offer a reliable, year-round alternative for further processing, spice blends, and industrial applications. Kredenbacher Hof is one of the first farms in Germany to professionally harvest and gently dry wild garlic. What began as a small operation has developed into a nationally renowned supplier for farm shops, markets, delicatessens, and restaurants. Our foragers harvest exclusively in near-natural areas that are officially approved and certified by independent organic inspection bodies. Experienced teams cut the leaves by hand, respecting the natural populations.

The drying process is gentle to preserve the characteristic wild garlic flavor and ensure consistent quality. Compared to fresh wild garlic, dried wild garlic is milder and less intense, but offers a reliable, long-lasting alternative for year-round use.
